Vegetarian Lettuce Boats

For the past little while I have been moving away from red and processed meats and exploring more vegetarian alternatives for meals and snacks. After working with a particular set of ingredients and realizing that their flavours and textures go great together (meaning they’re doable for a selective eater) I decided to throw them all together and create these yummy vegetarian lettuce boats! Made with hummus, fresh vegetables and romaine lettuce – these are simple to make and packed with flavour.

Not only are they great for a light lunch or a snack, but can be used as a simple and fun way for children to get active in the kitchen as well. You could even lay these out at your next party and have your guests make their own lettuce boats.

Including prep time, they only take about ten minutes to make!

INGREDIENTS (makes 2-3): 

½ cup diced onion

½ cup diced green, red or yellow sweet pepper

½ red kidney beans

½ cup corn

2-3 Romaine hearts

4 tbsp. your favourite hummus (I chose roasted garlic flavour, because it’s the greatest)


  1. Take your romaine hearts and lay them down so ­­they resemble a “boat” shape.
  2. Spread hummus along the inside of the romaine heart.
  3. Sprinkle your ingredients over the hummus – I start with the beans since they are the heaviest of the ingredient list.
  4. Hold like a taco and enjoy!
